It's a Jelly Season!




Last weekend I attended the first Christmas party for the season. It was a cocktail party which was also a belated (by 3 years!) house warming for my friend's apartment, let's call her Miss Goldi Locks. The apartment was already beautifully decorated so it didn't really need any extra Christmas decorations. I was too busy eating and drinking so I didn't take too many photos of the night, my bad.

Goldi Locks is famous for her salad, every time we have a gathering we always get her to make salad. One of my favourite is her beetroot salad. I'm not normally a fan of beetroot but she makes them taste sweet and juicy.
Who says you don't make friends with salad!

The cocktails were fruity and refreshing, perfect for a hot summer night. The mango and lychee cocktails were addictive.

I made candy cane macarons which I served in Santa's belly cookie jar, strawberry cupcakes, chili chocolate truffles (which wasn't chili at all for one of our friend's sake - he can't handle the heat! you know who you are!), and a surprise dessert - rainbow jelly in a jar. The jelly was just what everyone needed, something cold and sweet.

Mini Rudolph Cupcakes


What's more adorable than cupcakes? Mini cupcakes!

Keeping up with the Christmas cheer and nearing the holiday season, I decided to make these cute reindeer mini cupcakes. 
I used a vanilla cupcake recipe that TLS have tried and tested with normal sized cupcakes. They turn out perfectly with about 5 minutes less cooking time in the oven. The usual batch that makes about 12 normal sized cupcakes, made 24 mini ones and an additional 6 normal sized ones. So using my nerdy Mathis brain, every 1 normal sized cupcake makes 4 mini cupcakes!



Anyway back to Rudolph! I had fun breaking (and eating the remainder of) the pretzels to make the antlers. Peanut M&M's were used for the red noses. I had to hope and pray that there were enough red M&M's in the packet... But sadly there wasn't, and the rest of the reindeers had to be substituted with blue, yellow, orange and green noses.



For the icing I made home made ice chocolate, a simple brown background to create my reindeer faces. Next time I think a caramel icing would go well with the salty pretzels to make salted caramel!

Red Velvet Cupcakes

Today is my monthly anniversary with my darling fiance, Ray, whom I know will be rolling his eyes when he reads the heading of this post lol. 4 years and 4 months! and many many more to come!!
 
 We don't really celebrate our monthly anniversary but I do like to spoil him a little. And because I've been banned from shopping (online and in real life - doesn't he know that retail therapy is much cheaper than a therapist! (Not that I need a shrink - actually maybe I do ) I decided to bake him red velvet cupcakes, the kind of cupcakes couples have on their wedding day or Valentines day. And because its our mini-versary I made them into mini cupcakes!

For those unfamiliar with red velvet cupcakes (or cakes), it is basically a red colour chocolate cake topped with cream cheese frosting. It was made famous by New York's Waldorf-Astoria Hotel. In the original recipe, the red colour is caused by the chemical reaction between buttermilk, vinegar and the type of the cocoa used. However these days, most recipes call for red food colouring. But don't worry! I only use a tiny amount, and hey! everything is good in moderation right =)

When I went grocery shopping today, I saw the stores already start selling candy canes. So I started getting ideas of what to make of them. While I was contemplating a few options, my fiance texted me saying his work mate wants some macarons. His timing couldn't be anymore perfect! So candy cane macarons it is....
 
 

Before I made them, my favourite macarons was salted caramel. But now, its a close call between salted caramel and candy canes. The peppermint breaks the sweetness the way the salt in salted caramel does... If I were to make them again, I might mix white, pink and red (and hope they have pretty little feet!)

November is my favourite month of the year! Not only it is my birthday which means presents, but also it is one month away from Christmas. This year, since I am turning 21 for the 7th time, I didn't want any party. I'm sad to admit that as I get older, I get even more boring. So I spent my birthday quietly with my fiance and family over a nice dinner at Hurricane's Grill.

To me, one of the best thing about Christmas is the preparation. From setting up Christmas tree, organising Christmas gatherings, deciding food and dessert menu to Christmas shopping.
